Set aside some quality time before you start. Like all good things this recipe takes time to prepare and then some more when it boils. Trust me, the taste, goodness and health benefits provided will be worth the wait!


  • 1 ounce dried astragalus root slices
  • 1/2 inch piece fresh ginger root, chopped
  • 1/4 cup brown basmati rice
  • 4 cups vegetable stock
  • 4 cups homemade chicken broth
  • 1/2 cup onion, chopped
  • 1 cup winter squash, sliced
  • 1 cup shiitake or maitake mushrooms, sliced
  • 2 tbsp extra virgin olive oil
  • 1 cup corn, fresh or frozen
  • 2 tablespoons light miso
  • 8 medium cloves garlic, minced
  • 1/4 cup fresh parsley, minced


    1. Simmer astragalus, ginger, rice, vegetable stock and chicken broth in a heavy, covered, saucepan for 1 hour.
    2. Sauté onion, squash and mushrooms in olive oil for 5 minutes or until vegetables are soft.
    3. Add the fried vegetable mixture to the soup.
    4. Cover and simmer gently for another 30 minutes.
    5. Add corn.
    6. Boil another 10 minutes.
    7. Carefully open, and using tongs, remove astragalus.
    8. Dilute the miso in a small amount of the hot broth and then pour it back into the soup.
    9. For those who prefer a lighter soup, add additional vegetable stock or chicken broth.
    10. You can also add more miso to taste.
    11. Lastly add garlic and parsley.
    12. Shake well and let stand for 5 minutes.
    13. Serve and enjoy!
