It takes a little effort to prepare, but it’s absolutely worth it for the stunning side dish. Here’s how to make this fun and delicious potato recipe!

Ingredients for Hasselback Potatoes

Hasselback Potatoes Baked potatoes are cut into fans of thin strips, which are attached to the bottom. After the potatoes are baked, the slices become crispy and separate. Why are they called Hasselbach potatoes? The dish was popularized in the 1950s by a restaurant called Hasselbacken in Stockholm, Sweden. However, there are some earlier references to the dish (such as in a 1929 cookbook) which indicate that it may have originated elsewhere. Whatever the case, we owe the concept to the Swedes!

Although slicing Hasselbach potatoes takes a while, the ingredients are simple. Here’s what you’ll need for this recipe:

We have chosen russet potatoes for this Hasselback Potato recipe. This variety is also called a starchy potato, the type you use for classic baked potatoes or mashed potatoes. We used 12 to 13 ounces each potato, which is medium large. However, you can use other varieties and sizes with this technique as well.

You may need to adjust the roasting time if you use other varieties of potato: and especially if they are smaller than specified in the recipe!

How to Cut Hasselback Potatoes

Here’s the big question: How do you cut Hasselbach potatoes? These lovely thin slices look like they were made with a special cutting tool: and there really is such a thing! If you make Hasselbach potatoes often, you may want to invest in a special potato cutter. If not, all you need is a pair of chopsticks or similar item: pencil, wooden spoon, etc. Here’s what to do:

  • hold two chopsticks with the edges of a potato, These will act as guides to stop cutting all the way.
  • Cut potatoes into 1/8-inch slicesBe careful not to go all the way down using the guides.
  • Pay special attention to the ends Regarding potatoes that need a shallow cut: guides won’t help here! Repeat for each potato.

Some Notes on Bake Time

This Hasselback potatoes recipe calls for baking the potatoes for a total of 1 hour and 15 minutes, taking them out of the oven after 1 hour to brush them with olive oil once again and add salt. Here are some notes on baking:

  • Adjust the bake time if you have smaller potatoes or use a different variety. The main thing you are looking for is that the potatoes are perfectly tender and cooked with crispy slices that have started to separate.
  • After the slices are separated add more oil and salt. An initial bake time of 1 hour should work for a maximum of 12 ounces of potatoes. But if your potatoes are small, check them after 45 minutes.
  • Bake again, then brush with garlic butter. We’ve found the best way to infuse flavor into Hasselback potatoes is to finish them with garlic butter and flaky salt so they taste pretty delicious. It’s hard to get into all the cracks and crevices, so seasoning at the end is key.

  • 6 medium red potatoes (12 to 13-ounce each)
  • 2 tablespoons Olive Oil
  • ¾ tsp kosher salt
  • 3 tbsp salted butter (or vegan butter)
  • 1 garlic clove, grated
  • ½ tsp Italian seasoning
  • Flaky sea salt, for garnishing
  • 1 tablespoon Finely chopped parsley or chives for garnishing
  • Other toppings as desired (sour cream, cheese, green onions, bacon, etc.)

  1. Preheat oven to 450°F.
  2. Wash and dry the potatoes.
  3. Place two chopsticks* along the edges of a potato. These will act as guides to prevent cutting completely. Cut one potato into 1/8-inch slices, being careful not to go all the way down, using the guide. Pay special attention to the ends of the potatoes that need a shallow cut: guides won’t help here! Repeat for each potato.
  4. Place potatoes on a parchment or aluminum-foil baking sheet. brush with 1 tablespoon olive oil.
  5. Bake for 60 minutes, until the potato slices begin to separate. Remove tray from oven and brush with remaining 1 tablespoon olive oil. Sprinkle evenly with ¾ teaspoon kosher salt.
  6. Place the potatoes back in the oven and bake for 10 to 15 minutes (or less for smaller potatoes), until they are crisp, lightly browned, and easily pierced with a knife. Meanwhile, melt butter in a small saucepan. Mix garlic and Italian seasoning and take it off the heat.
  7. When the potatoes are cooked, remove them from the oven and brush with melted seasoned butter, making sure to evenly distribute the seasonings that sink to the bottom. While sprinkling a little flaky sea salt over the potatoes, mash the potatoes gently with one hand. Serve immediately garnished with parsley or chives.
