Easy Skirt Steak Marinade
Elevate steak night at your home by marinating skirt steak in this easy skirt steak marinade. This will add great flavor to the steak without overpowering the steak’s natural flavors. This marinade will also keep the beef moist and flavorful.

Why should I marinate skirt steak?
Tendering: Marinating skirt steak is a must. This is a tough cut of beef that benefits from being marinated in a citrus and/or vinegar-based product.
AddS Taste: This marinade will infuse the skirt steak with lots of juicy flavors, complimenting the steak’s natural flavors.
Worcestershire sauce: Worcestershire is a vinegar-based sauce containing anchovies, garlic, tamarind and other ingredients that make a savory sauce that goes perfectly with skirt steak.
Garlic: Adding fresh garlic to any marinade adds flavor. We don’t recommend subbing garlic powder.
Lemon juice: A little citric acid adds balance to this pickle.
Freshly Ground Black Pepper: We highly recommend using freshly cracked black pepper in this marinade to set off the peppery flavor on top.
kosher salt: Salt enhances the flavor of each ingredient but also helps tenderize skirt steak.
Brown sugar: Slightly sweet to balance out all the salty ingredients.
Coriander: This seasoning adds a little earthiness and a boost of flavor to this skirt steak.

How to Marinate Skirt Steak (3 Steps)
- Mix: Simply combine all the ingredients in a bowl or jar and mix.
- Marinate: Place the skirt steak in a dish or large gallon-sized bag and pour in the marinade. Make sure all sides are nice and coated.

How to Make Marinated Skirt Steak
For a delicious grilled skirt steak, replace the flank steak in this Grilled Flank Steak recipe with skirt steak and serve it next to grilled corn on the cob.
Use skirt steak in these Steak Fajitas! Both skirt steak and flank steak are excellent cuts of meat.
- 2 LBS. pieces of meat ~ 2 long, thin steaks
- 2 spoon kosher salt
- 1.5 big spoon black peppercorns
- 5 Clove Garlic peeled minced
- 1 small spoon Coriander
- 1.5 spoon light brown sugar
- 3 big spoon Worcestershire sauce
- 2 big spoon fresh lime juice
- ¼ cup Olive Oil + More to discover
Place the skirt steak face down on a cutting board and pound the skirt steak with the meat tenderizer to make the steak an even thickness, about ½ – 1 inch thick. Season the meat with salt and massage the salt into the meat with your hands. Transfer steak to a plastic bag or baking dish.
Next, grind the black peppercorns in a mortar and pestle or in a coffee grinder. Make sure that the black pepper is ground into small pieces and not a powder. Take out the black pepper in a bowl. Add the garlic, coriander, brown sugar, Worcestershire sauce, lemon juice and olive oil to the pepper and whisk all the ingredients together.
Pour mixture over beef and massage marinade into meat. Let beef sit in marinade overnight.
Remove the steak from the refrigerator and allow the beef to come to room temperature. Follow this skirt steak recipe for the rest of the instructions.
Tips and Notes
- If you prefer a perfectly cooked steak, be sure to cook the steak longer on each side.
